{"id":5610,"date":"2023-12-08T16:09:26","date_gmt":"2023-12-08T15:09:26","guid":{"rendered":"https:\/\/gueye-dieteticienne.fr\/?p=5610"},"modified":"2023-12-08T16:09:26","modified_gmt":"2023-12-08T15:09:26","slug":"quark-stollen","status":"publish","type":"post","link":"https:\/\/gueye-dieteticienne.fr\/?p=5610","title":{"rendered":"QUARK STOLLEN"},"content":{"rendered":"<table>\n<tbody>\n<tr>\n<td><b>Ingr\u00e9dients\u00a0<\/b><\/p>\n<p><b>\u00a0Pour la p\u00e2te :\u00a0<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">500 gr de farine t45 ou t55<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">3 oeufs<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">125 g de sucre<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">7 gr de sel<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">250 gr de fromage frais (cottage ou petit-suisse)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">175 g de beurre +30 gr fondu<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\/2 c.c de cannelle, gingembre, cardamome, noix de muscade, 1 clou de girofle \u00e9cras\u00e9<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">qq gouttes d\u2019amande\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">15 g de levure chimique<\/span><\/li>\n<\/ul>\n<\/td>\n<td><b>Garniture :<\/b><b>\u00a0<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 zeste d\u2019orange bio<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">70 gr de noix m\u00e9lang\u00e9es<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">140 gr de raisins secs<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">100 gr de fruits confits<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 c. \u00e0 caf\u00e9 de cannelle<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Eau de fleur d\u2019oranger (ou rhum)+ le jus d\u20191 orange<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">sucre glace<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">(200 gr de massepain) facultatif<\/span><\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><b>Les fruits secs :<\/b><span style=\"font-weight: 400;\"> Hacher grossi\u00e8rement les noix (r\u00e9server) mettre les raisins secs (uniquement) dans un bol herm\u00e9tique et arrosez-les d\u2019eau de fleur d\u2019oranger + jus d\u2019orange, fermer et laissez mac\u00e9rer 1 h, toute une nuit c\u2019est mieux.<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><b>La p\u00e2te<\/b><span style=\"font-weight: 400;\"> :<\/span> <span style=\"font-weight: 400;\">Dans un bol mettre la farine, la levure tamis\u00e9e<\/span><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">dans la cuve du robot \u00e9quip\u00e9 de la feuille -le fouet plat- mettre le beurre mou et le sucre, m\u00e9langer quelques minutes, ajouter \u00e0 petite vitesse, les oeufs un \u00e0 un, battre jusqu&rsquo;\u00e0 compl\u00e8te incorporation, ajouter le fromage frais, les \u00e9pices, le zeste d\u2019orange, le sel.\u00a0 Ajouter alors les fruits confits, les noix, les fruits secs mac\u00e9r\u00e9s au jus d\u2019orange, et le massepain couper en petits morceaux <\/span><b>(facultatif)<\/b><span style=\"font-weight: 400;\">, puis la farine et la levure, bien m\u00e9langer pour obtenir une p\u00e2te homog\u00e8ne pendant 7 minutes toujours \u00e0 petite vitesse, laisser reposer la p\u00e2te 30 minutes au r\u00e9frig\u00e9rateur <\/span><b>(facultatif)<\/b><span style=\"font-weight: 400;\">. Pour le fa\u00e7onnage, faire une boule, l\u2019aplatir et la replier en deux \u00e0 la mani\u00e8re d\u2019un chausson. Beurrer et fariner le moule.
